Healthy cheesy potatoes image

This can be a main dish or a side dish. Either way, it delish! And it won't kill your diet either. Calories per serving: 129 Fat: 3 grams Carbs: 30 grams

Number Of Ingredients 8

1 - 10-3/4 oz can reduced fat, condensed cream of chicken soup
1 cup(s) reduced-fat, shredded cheddar cheese
1/2 cup(s) fat-free milk
1/2 cup(s) light sour cream
1/3 cup(s) finely chopped onion
1/2 teaspoon(s) pepper
1 - 30-32 oz pkg frozen shredded hash brown potatoes, thawed
1/2 cup(s) cornflakes cereal, crushed

Steps:

  • Heat oven to 350. Spray a 2-quart casserole dish w/ cooking spray. In lg bowl, combine soup, cheese, milk, sour cream, onion and pepper.
  • Stir in potatoes. Spread mix into casserole dish. Cover, bake 45 mins. Stir potatoes and sprinkle w/ crushed cornflakes.
  • Bake 20 mins or until bubbly.
