HAZELNUT COFFEE CAKE image

3/4 cup brown sugar
1 cup all-purpose flour
1 cup whole-wheat flour
1 tsp baking soda
1 tsp baking powder
1 tsp ground cinnamon
1 tsp ground nutmeg
1/2 tsp salt
2/3 cup milk
1 egg
1/4 cup honey
1/2 cup ground hazelnuts
Topping:
1 cup sifted confectioners' sugar
1 to 2 Tbsp hot milk
1/2 cup whole hazelnuts

Steps:

  • Preheat oven to 350F. Mix first 8 dry ingredients together. Combine milk, egg and honey and add to dry ingredients, blending well. Fold in ground hazelnuts. Pour into a greased 9" square baking pan and bake for 1 hour or untl cake tests done. Cool slightly, then remove from pan. Combine confectioners' sugar with hot milk and beat until smooth. Drizzle carefully with a spoon over the top of cooled cake in a lattice or cross-hatch design. Place whole hazelnuts in boxes formed by the design.
