2 1/2 cups hazelnuts, roasted and skinned*
2 cups granulated sugar
1/2 cup water
3 tablespoons light corn syrup

Steps:

  • Coarsely chop roasted hazelnuts. Set aside. Lightly oil an 11x17x1-inch jelly roll pan. Place sugar, water and corn syrup in medium saucepan. Cook over high heat until sugar dissolves and mixture turns caramel-colored. Stir in hazelnuts and immediately pour mixture into prepared pan. Allow to cool completely and then break into shards.
