Hawaiian Spam® Bites image

When challenged to develop a recipe using Spam® as a main ingredient for a campout, this is what I came up with. Tasty bite-size pillows filled with Spam® and pineapple are served with sweet chili sauce for dipping. These are super easy to prepare, but do take a bit of time to fill and shape the pillows.

cooking spray
1 (12 ounce) can fully cooked luncheon meat (such as SPAM®), grated
1 (8 ounce) can crushed pineapple, drained
¼ cup dry bread crumbs
¼ cup milk
1 large egg, lightly beaten
1 teaspoon smoky, sweet red pepper flakes
salt and ground black pepper to taste
ground white pepper to taste
60 (3.5 inch square) wonton wrappers
water as needed
1 teaspoon olive oil, or as needed

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a baking sheet with cooking spray.
  • Mix grated luncheon meat, pineapple, bread crumbs, milk, egg, red pepper flakes, salt, black pepper, and white pepper together in a bowl. Spoon about 1 teaspoon meat-pineapple mixture onto the center of each wonton wrapper. Brush the edges of wrapper with water and fold in half diagonally over filling, sealing the edges together. Arrange wontons on the prepared baking sheet; brush each with olive oil.
  • Bake in the preheated oven until lightly browned, 10 to 15 minutes.
