Hawaiian Bread image

I've had this recipe for so many years, I have no idea where I got it. This is a delicious bread but it is really a desert. So good!

Number Of Ingredients 8

3 1/2 c pineapple, crushed with juice
3 c coconut
4 eggs, slightly beaten
1 1/2 c sugar
4 c all purpose flour
2 tsp salt
2 tsp baking soda
1 jar(s) maraschino cherries, chopped

Steps:

  • 1. In a large bowl mix pineapple with juice, coconut, cherries, eggs and sugar together. Add flour, salt, and baking soda, mix well. Use spoon to mix, do not use an electric mixer.
  • 2. Pour into 2(two) well greased loaf pans.
  • 3. Preheat oven to 325 degrees. Bake 1 hour or until tooth pick in center comes out clean. Cool in pans about 10 minutes, remove from pans and cool completely on wire rack.
  • 4. When completely cool wrap in foil and refrigerate.
