Steps:
- 1. Cook bacon till crisp. Crumble. Discard drippings on pan and add onion and garlic to pan, cook 5 min. or till tender. Stir in potatoes; cover & cook for 15 min, stirring occas. 2. Combine crumbled bacon, 1/4 C. cheese, green onions, sour cream, salt, pepper and soup in lg. bowl. Add potatoes mixture; toss gently to combine. Spoon into 11x7 baking dish coated w/cooking spray. Sprinkle w/remaining 3/4 C. cheese. Cover w/foil coated w/spray. Refrig. 8 hours or overnight. 3. Heat oven to 350. 4. Remove from fridge & let stabnd @ room temp. for 15 min. Bake casserole, covered for 30 min. or till bubbly around edges and cheese begins to brown.
