Haricots Verts image

Number Of Ingredients 8

2 pounds haricots verts
4 tablespoons unsalted butter
1/2 cup chopped onion
2 cloves garlic minced
2 tablespoons red wine vinegar
salt and pepper to taste
freshly ground nutmeg
2 tablespoons chopped parsley

Steps:

  • In a large pot, bring 2 quarts salted water to a boil. Add haricots verts, bring to a boil and boil for 5 minutes. Drain and plunge into a large bowl of ice water for 5 minutes. Drain and set aside. In a large, heavy skillet, melt the butter over medium heat. Add the onion and garlic and sauté for 3 minutes. Raise heat to high, add the haricots verts and sauté for 2 minutes, stirring constantly. Add vinegar and heat for 30 seconds. Season to taste with salt and pepper. Remove to serving platter and then sprinkle with nutmeg and parsley.
