My mother used to say that the best part of a Ham during the holiday's was the ham salad she made from the left overs. I have to say I am inclined to agree with her. I only make this at Thanksgiving, Christmas and Easter when we typically cook a ham. I do get enough to freeze enough ham to make it in the mean time. This ham...

Number Of Ingredients 7

1 1/2 c ham, chopped finely
2 large boiled eggs, chopped finely
2 celery stalks, chopped finely
1/2 medium yellow onion, chopped finely
1/2 c mayonnaise
1/4 c sweet pickle relish
salt and pepper to taste

Steps:

  • 1. In a medium bowl mash eggs with back of spoon. Add salt & pepper to taste
  • 2. Stir in finely chopped onions, pickle relish, celery and mayonnaise. Mix well
  • 3. Add ham that has been chopped with a food processor until very fine. Serve on bread or crackers.
