Ham and Vegetable Linguine image

1 lb linguine, uncooked
1 lb fresh asparagus, cut into 1 inch spears
1 lb mushrooms, sliced
2 carrot, thinly sliced
1-2 zucchini, diced
2-3 c ham, cooked and julienned
1/4 c butter + 1 tbsp olive oil
2 c half and half
1 c parmesan cheese, grated
1 c peas, frozen
5-6 green onion, sliced
1/2 c parmesan cheese, grated
1/4 c fresh basil
1/2 tsp salt
1/2 tsp ground black pepper

Steps:

  • 1. Cook linguine according to package directions.
  • 2. Meanwhile, in a large skillet, saute asparagus, mushrooms, carrot, zucchini and ham in butter and olive oil until the vegetables are tender.
  • 3. Add cream, peas, onions, Parmesan, basil, salt, pepper and nutmeg; bring to a boil.
  • 4. Reduce heat; simmer for 3 minutes, stirring frequently.
  • 5. Rinse and drain linguine; toss with vegetable sauce and serve. Sprinkle with extra Parmesan cheese if desired.
