HALIBUT WITH GINGER image

Number Of Ingredients 9

4 (6-oz) halibut fillets
3 tbs. olive oil
2 tbs. butter
1 tbs. fresh ginger, grated
3 cloves garlic, minced
2 tbs. cilantro, minced
1 large tomato diced
juice of 1 lemon
salt and pepper

Steps:

  • 1. Heat the oil in a large skillet, cook the halibut for 2 minutes on each side. Remove fish to a warm serving platter. 2 Add the ginger, garlic, tomatoes, cilantro and butter to the skillet. Simmer for 1 minute, salt and pepper to taste. 3. Spoon the sauce around the fillets and serve at once with curried jasmine rice.
