Steps:
- 1. Heat the oil in a large skillet, cook the halibut for 2 minutes on each side. Remove fish to a warm serving platter. 2 Add the ginger, garlic, tomatoes, cilantro and butter to the skillet. Simmer for 1 minute, salt and pepper to taste. 3. Spoon the sauce around the fillets and serve at once with curried jasmine rice.
