HADDOCK IN A FRESH TOMATO SAUCE image

6 tbl olive oil
2/3 cup chopped onions
2 tsp minced garlic
9 medium tomatoes, peeled, seeded, coarsely chopped
3 tbl chopped basil
flour, for dredging
2 lbs haddock, scrod,pollock, cut into serving pieces
3 tbl Parmesan cheese
2/3 cup grated Monterey Jack or mozzarella cheese

Steps:

  • Preheat oven to 375. Heat 3 tbl olive oil in large casserole, and add onions. Cook for 2 minutes, stirring frequently, or until onions wilt slightly. Stir in garlic and cook 1 minute. Add tomatoes and cook over medium high heat for about 10 minutes, stirring frequently. Sauce will retain chunky texture.Stir in basil and cook 1 minute. Meanwhile, flour fish, shake off excess, heat remaining oil in large frying pan and saute fish for 1 minute each side, or until barely browned. Place fish in ovenproof dish and top with tomato sauce. Sprinkle first with Parmesan cheese, then with Monterey Jack. Bake for about 10 minutes or until fish is baked thru and cheese has melted. For fuller meal, saute 2 medium sliced zucchini in olive oil and arrange around ring of fish in baking dish, topped with some of the tomato sauce.
