GUMDROP COOKIES image

Number Of Ingredients 11

2 C all purpose flour plus 4 tbsp sifted pastry flour
1 tsp baking powder
½ tsp baking soda
2 C oatmeal (not instant)
1 C shredded coconut (optional)
1 C gum drops chopped (no black)
1 C shortening (or butter or margarine)
1 C brown sugar
1 C white sugar
2 eggs
1 tsp vanilla

Steps:

  • In a large bowl, cream shortening and sugars, add eggs and beat well. Add vanilla. Sift flours, baking powder and soda, and stir into creamed mixture. Add oats, coconut and gum drops. Roll into small balls (on waxed paper works well). Press flat with back of fork or spoon. Bake on ungreased cookie sheets at 375 for 10 minutes. Do not overbake. Best chewy.
