Guava Cake With Cream Cheese Frosting image

A modification of several different recipes in order to fit the ingredients I had available. Great use for fresh guavas!!

Number Of Ingredients 13

1 cup flour
1 cup whole wheat pastry flour
1 cup sugar
4 teaspoons baking powder
1 teaspoon salt
1/2 cup plus 2 tbsp butter
2 eggs
1 cup guava puree
1 teaspoon vanilla
4 ounces cream cheese (softened)
1/4 cup butter (softened)
1 1/2 cups powdered sugar
1 teaspoon vanilla

Steps:

  • Preheat oven to 350 degrees. Grease an 8" springform pan with butter.
  • Whip butter and sugar.
  • Add eggs, vanilla, and guava puree, mixing well after each addition.
  • Add dry ingredients and mix.
  • Pour batter in pan and spread evenly.
  • Bake for 25-35 minutes until toothpick comes out clean.
  • To make frosting: whip all ingredients with an electric mixer until smooth.
