Guacamole with Pea Shoots image

3 ripe avocados
1 cup pea shoots, minced
2 tablespoons olive oil
1 teaspoon minced shallots
Juice of 1 lime, plus more if needed
Kosher salt

Steps:

  • Remove the avocado flesh to a bowl, discarding the skins and pits. Add the pea shoots to the avocado along with the olive oil, shallot, lime juice and salt to taste. Using a fork or rubber spatula, mash the guacamole into a chunky situation almost resembling smashed potatoes. Check the seasoning and adjust as necessary with salt or lime juice as desired. Serve as soon as you can.
