GROUPER GOUDA WITH SLICED ALMONDS image

Number Of Ingredients 14

1.5 - 2.0 Lb Grouper filet
8 oz Gouda cheese, cut into cubes
1/2 C milk (whole or reduced fat)
Salt & white pepper to taste
1 tsp Lemon zest, finely grated
Sauce:
2 Tbls butter
1 small shallot, finely sliced about 2 Tbls total
2 Tbls all purpose flour (for thickening)
1 tsp mustard powder
1/4 C sliced almonds
1/4 C dry white wine
1/2 tsp Salt
1/4 tsp white pepper

Steps:

  • Pre-heat oven to 375 degrees. Line a deep baking dish with foil, or spray a ceramic dish with non-stick spray. Place the Grouper filet in the baking dish and pour milk over the filet. Season with salt and white pepper and bake 20 minutes, or until the grouper is done in the thickest part of the filet. While the Grouper is cooking, begin making the sauce by melting the butter in a saucepan over medium high heat. Saute the shallots 2-3 minutes until they begin to turn golden, then remove the shallots and reserve. Add the Gouda to the butter, stirring occasionally until melted. Add the white wine, flour, and mustard, mixing well and cook until the sauce thickens slightly. Add salt and white pepper to taste. Pour the cheese mixture over the Grouper filet, top with browned shallots and sliced almonds, and put under the broiler just long enough to toast the almonds. After broiling, sprinkle with lemon zest.
