Ground Turkey Loaf image

This is a hearty meat dish that is low in fat and sodium. It's healthier than most ground meat dishes, easy to make, and tastes great! Leftovers freeze well too!

Number Of Ingredients 11

1 lb ground turkey, low fat
1 large egg (or 1/4 cup of liquid egg substitute)
1/2 medium chopped onion
1 c uncooked rolled oats
1/2 tsp oregano
1/2 tsp thyme
1/2 tsp parsley
1/2 c sliced mushrooms
salt and pepper to taste
1/4 c low fat milk
1 Tbsp crushed garlic (i use refrigerated garlic in the jar)

Steps:

  • 1. Preheat oven to 400 degrees F.
  • 2. Mix turkey, oatmeal, milk and egg in a bowl, using hands to ensure thorough mixing.
  • 3. Stir in remaining ingredients; onions, mushrooms, garlic and spices.
  • 4. Spray a loaf pan with nonstick cooking spray. Form into a loaf and cover with foil.
  • 5. Bake covered for 40-45 minutes, uncover and cook an additinal 10 minutes.
  • 6. NOTES: Depending on what kind of side dishes I plan to have, I sometimes add a tomato topping during the last 10 minutes of baking, or I make mushroom gravy to serve over top. Leftovers make great open faced sandwiches!
