- 1. Make sure your grill is hot... You will want to heat the grill to about medium-high heat.
- 2. Brush both sides of the swordfish with the olive oil then season with coriander, thyme and salt and pepper.
- 3. Grill swordfish steaks 3 - 5 minutes per side (depending on thickness).
- 4. Top each steak with a dab of butter or a drizzle of olive oil, add a lime wedge or two, for squeezing over the fish and top with cilantro and lime or lemon zest for garnish.
