GRILLED SALMON WITH WARM AVOCADO TEQUILA SAUCE image

Number Of Ingredients 8

4 lg avocados, seeded and peeled
4 lg garlic cloves
1/2 c each fresh lime juice and tequila
4 jalapeƱos, seeded
4 c fish stock or clam juice
4 7oz salmon filets
cooked rice and steamed veggies
lime wedges and cilantro for garnish

Steps:

  • Place first six ingredients in blender and puree. Pour into saucepan and warm over med-low heat. Heat grill. Grill salmon until cooked through, turning once. Pour a little sauce on each of 4 plates and top with a grilled fillet. Serve with rice, veggies and garnish.
