Grilled Salmon Skewers with Red Pepper, Onion and Mushrooms image

Number Of Ingredients 8

1/2 pound salmon fillet
1 red pepper
1/2 large onion
9 medium mushrooms halved
1 oil
1 salt to taste
1 freshly ground pepper to taste
4 skewers

Steps:

  • Preheat BBQ
  • Rinse the salmon and gently pat dry with paper towel
  • Cube the salmon roughly 2" thick
  • Cut the pepper and onion to small pieces 2" thick
  • Brush the salmon and vegetables with oil
  • Season salmon and vegetables with salt and pepper
  • Place the salmon and vegetables on skewers
  • Place skewers directly on BBQ or grill-safe tray
  • Grill for several minutes on each side but do not turn more than once
  • The salmon should flake easily when done
