Grilled Portobello Mushrooms With Hummus And Feta Cheese image

Number Of Ingredients 7

4 medium portobello mushrooms, stems and gills removed
1 tablespoon olive oil
sea salt
coarse ground black pepper
24 Carr's® Table Water® crackers, assorted
1/2 cup hummus
1 cup crumbled feta cheese (4-oz)

Steps:

  • 1. Preheat grill. Brush mushrooms with olive oil. Sprinkle with salt and pepper. Grill mushrooms on rack of grill directly over medium-high heat for 8 minutes or until tender, turning once halfway through grilling.2. Cool mushrooms. Cut each mushroom into quarters. Cut each quarter into 1/4-inch-thick slices. Top crackers with hummus and several slices of mushroom. Sprinkle with feta cheese. Serve immediately.
