Grilled Lemon Sage Chicken image

I was given a cookbook for a christmas gift-American Heart Association by a dear friend. I love chicken and I want to make all my chicken meals healthier for my 3 sons and myself. I have a George Forman grill and can't wait to make this delicious recipe. I know it says to grill over coals and if you have a grill for outside you can grill it this way. 6 - boneless chicken breast fillets-4 oz
1/2 cup(s) olive oil
1/2 cup(s) fresh lemon juice
1 tablespoon(s) chopped fresh rosemary
1/4 cup(s) chopped fresh sage leaves
1/2 teaspoon(s) salt
1 teaspoon(s) black peppercorns,cracked
2-3 clove(s) garlic, minced
1 teaspoon(s) grated lemon rind
- garnish-6 lemon slices,cut in half
- sage leaves

Steps:

  • Rinse chicken and pat dry. Place pieces between two sheets of plastic wrap and flatten to 1/8th inch thickness with a mallot. Arrange chicken in a glass dish or a enamel baking dish.
  • In a small bowl, combine oil, lemon juice,herbs,salt,pepper,garlic and lemon rind. Mix well. Pour over chicken and turn pieces to coat evenly.
  • Cover and refrigerate for several hours or overnight, turning pieces occasionally.
  • Grill marinated chicken over hot coals. Grill over direct heat for 15 minutes then over indirect heat for 10 minutes or until a meat thermometer reads 165 degrees. Serve with lemon slices and sage leaves if you wish.
