GRILLED HERBED TURKEY TENDERLOIN W/MAPLE-LEMON SAUCE image

1/4 Cup olive oil 3 Tbl.chopped fresh parsley 2 Tbl.chopped fresh oregano pinch red pepper
salt
pepper 2 turkey tenderloins 1 lb ea. 1 strip bacon thick-sliced diced 2 Tbl.minced shallots 2/3 cup dry white wine 2/3 cup apple juice 3 Tbl. maple syrup 2 tsp.Dijon mustard juice from 1/2 a lemon 1 Tbl.unsalted butter
soft 1 tsp.all purpose flour 2 Tbl.chopped fresh chives

Steps:

  • COAT: grill with nonstick spray preheat to medium COMBINE:oil,parsley,oregano and seasonings in a large resealable plastic bag (1 gallon freezer bag) add turkey and marinate 15 min. SAUTE:bacon for the sauce until crisp in small saute pan over med heat. Drain bacon on paper towels pour off all but 1 Tbl. of bacon drippings. Add Shallots and cook until soft about 1 min. DEGLAZE SAUTE PAN:with wine and apple juice; simmer 3 mins. Whisk in maple syrup,mustard and lemon juice bring to a simmer BLEND:butter and flour, then whisk it into the sauce, simmer until thickened, about 2 mins. Season with salt and pepper;finish with reserved bacon and chives just before serving. GRILL:turkey covered for 8 minutes then turn, cover and cook to 160 degrees (meat thermometer)approx 8-10 mins more. let rest 5 minutes before slicing. DRIZZLE: sauce over slice turkey.
