GRILLED HALIBUT WITH SALSA image

1 lb Halibut filet cut into 2 pieces
2 tbls evoo
1 teas cumin
1 teas chili powder
1 teas kosher salt
1/2 teas fresh ground pepper
Salsa
1/4 cup fresh pineapple diced
1/2 cup fresh mango, diced
1 kiwi peeled and diced
2 tbls diced red bel pepper
1/2 serrano chili, minced with seeds removed
2 tbls diced green onion
1 tbls chopped cilantro
1 tbls rice vinegar
1 tbls canola oil
1/2 avocado diced
kosher salt to taste

Steps:

  • SALSA In a medium bowl add pineapple, mango, kiwi, red pepper, serrano. onion, cilantro, vinegar and oil and gently mix. Add salt to taste and mix again. Gently fold in avocado pieces, cover with plastic wrap and refrigerate for 1-3 hours before serving over grilled halibut. HALIBUT preheat grill or grill pan brush fish with olive oil and season with cumin, chili powder, salt and pepper and cook approx 3 min per side or until cooked through.
