GRILLED HALIBUT WITH FENNEL, RED ONION AND OREGANO image

Number Of Ingredients 7

4 halibut filets
1 orange
1 bulb fennel, quartered, core removed, thinly sliced
1 red onion, thinly sliced
2 tbsp red wine vinegar
Handful flat leaf parsely
1 tbsp fresh oregano, chopped

Steps:

  • Drizzle evoo over fish and season with salt and pepper. Grill 4 minutes on each side until fish is firm but not tough. Preheat skillet. Add oil, fennel and onions and season with s&p; cook 3-5 minutes until they soften. Add vinegar to the pan. Remove from heat and toss in the oranges, parsely and oregano. Serve salad on dinner plates topped with fish.
