GRILLED ASPARAGUS AND WILD SALMON image

2 pounds of asparagus
6 6ounce salmon fillets
9 cups baby spinach
1 tbl sesame seeds , toasted(dont worry if you dont have them)
Vinaigrette:
3 Tbl sherry vinegar
2 Tbl lemon juice
2 Tbl finely chopped shallot
1 Tbl soy sauce
2 tsp grated ginger
1 1/2 tsp sugar
1 1/2 tsp chili garlic sauce
2 cloves garlic, minced
1/2 cup salad oil

Steps:

  • Clean and trim the asparagus. Brush the asparagus and salmon with olive oil , and salt and pepper Grill... Vinaigrette...Mix all ingredients in the bowl except the salad oil..While whisking,,slowing add the salad oil and whisk until emulsified. Toss spinach with 1/4 the dressingin bowl....Divide among the plates.Toss asparagus in same bowl, with 1/4 the dressing, and arrange on top of spinach. Place a salmon portion on top of each salad. Drizzle with dressing and top with toasted sesame seeds.
