GREEN (STRING) BEANS WITH SHALLOTS image

1 # French string beans (haricots verts), ends removed
kosher salt
2 T unsalted butter
1 T olive oil
3 lg shallots
1/2 t pepper

Steps:

  • Blanch string beans in lg pot of boiling water for 1 &1/2 min. Drain and immerse in ice water. Heat butter and oil in saute pan and saute shallots on med for 5-10 min, tossing occasionally; until lightly browned. Drain beans and add to shallots w 1/2 t S & P. toss. **larger beans blanch 3 min until crisp tender
