Steps:
- Cook green beans in rapidly boiling salted water until crisp-tender, about 2 mins. Transfer into an ice bath (shock) for 5 mins; drain well. Reserve 1 tsp sesame seeds for garnish, then coarsely grind or crush remaining in a mortar or spice grinder. Prepare the dressing by whisking the miso, mirin, water, ground sesame seeds and sugar into smooth paste. Toss the beans with the dressing. Taste and adjust seasoning with salt or mirin as needed. Serve sprinkled with reserved toasted sesame seeds.
