GREEN BEANS WITH PECAN BROWN BUTTER image

3 pounds thin green beans, trimmed
6 tablespoons unsalted butter
1 cup pecans, coarsely choppped
2 garlic cloves, finely chopped
1 teaspoon kosher salt
1/2 teaspoon Freshly ground black pepper
1/4 cup finely chopped fresh flat-leaf parsley

Steps:

  • Cook beans in boiling salted water until crisp tender, about 4 minutes. Transfer to a bowl of ice and cold water to stop cooking, and drain well. Melt butter in a 12-inch heavy skillet over moderate heat and cook, stirring occasionally, until browned and fragrant, about 3 minutes. Stir in pecans with garlic and cook 2 minutes more. Add green beans, salt and pepper, stirring, and cook until heated through, about 4 minutes. Serve topped with parsley.
