GREEN BEANS WITH GARLIC VINAIGRETTE image

Vinaigrette:
1/2 teaspoon grated lemon rind
1 tablespoon fresh lemon juice
2 teaspoons olive oil
1 teaspoon dijon mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
2 garlic cloves, minced
Beans:
2 1/2 pounds green beans, trimmed
1/2 cup sliced almonds, toasted
1 tablespoon fresh thyme leaves

Steps:

  • To prepare vinaigrette, combine first 7 ingredientsin a small bowl, stirring with whisk. To prepare beans, cook in a large pot of boiling water 4 minutes until crisp-tender. Drain. Place beans in large bowl. Add vinaigrette and toss. Sprinkle with almonds and thyme.
