Green beans, Walnut & Feta cheese Salad image

Easy to make and only 10 inexpensive ingredents. Taste like it took hours to make but in reality, it takes only a few minutes. I make this to take to potluck suppers,Bunko dinners with our friends & game night at our church. I have made this dish in place of Greenbean Casserole at Thanksgiving and Christmas dinners. Everyone asks me to make this,my family loves it I hope you do too!

Number Of Ingredients 9

3/4 pound(s) 3/4 pound of green beans (4 cans of drained green )beans
6 tablespoon(s) light extra virgin olive oil
1/4 cup(s) packed,finely chopped,fresh mint leaves
1/2 cup(s) diced red onion
2 teaspoon(s) white wine vinegar
1/4 teaspoon(s) minced garlic
1/8 teaspoon(s) black pepper
1/2 cup(s) toasted or roasted & chopped walnuts or pecans
1/2 cup(s) crumbled feta cheese

Steps:

  • Wash beans,trim ends and cut into 2 inch sections. Steam until just tender (al dente).
  • Combine oil,mint,vinegar,salt,pepper,garlic into a blender and process until smooth.
  • Put the green beans into a shallow serving dish, sprinkle with nuts, onion and feta cheese. Toss with dressing just before serving. This is hood chilled or room temp. I usually add sliced red and yellow bell peppers. I have also used bacon pieces and halved baby tomatoes and yellow wax beans to add extra color and taste. The variations are remarkable!
