Greek String Beans and Potatoes in Tomato Sauce image

Try adding cumin. Or you can add 1 1/2-2 inch cubes of lamb shoulder sautéed with onion and garlic and make the recipe into a stew.

Number Of Ingredients 14

2 lb string beans
2 medium onions, chopped
2 clove garlic, minced
3/4 c olive oil, extra virgin
16 oz tomato sauce
2 tsp kosher salt
dash(es) freshly ground black pepper
fresh parsley, chopped
fresh mint, chopped
2 large potatoes peeled and quartered
1 c water
2 medium carrots, sliced, optional
1/4 c celery, chopped, optional
16 oz canned white beans, drained,optional

Steps:

  • 1. Sauté onions and garlic lightly in olive oil. Add tomato sauce, salt and pepper and simmer about 15 minutes. Add remaining ingredients. Cover and cook slowly 1 hour or til tender. Note: try adding garlic and cumin. You can add 1 1/2-2 inch cubes of lamb shoulder sautéed with onion and garlic and make the recipe into a stew
  • 2. Fasoulakia Yiahni is the Greek name of this traditional dish. We like to top with some crumbled feta cheese. Yum.
