GREEK LAMB WITH SPINACH AND ARTICHOKES image

Number Of Ingredients 9

2 - 21/2 pounds Boneless lamb shoulder roast, cut into 2 - 3" chunks
19 oz can Cannellini Beans, rinsed and drained
1 can Diced tomatoes (14.5 oz.)
6 cloves Garlic cloves, minced
1/2 teaspoon Dried oregano
1 jar Artichoke hearts, quartered, 14 oz. (I used marinated)
3 cups Fresh baby spinach
3 cups Cooked orzo
8 ounces Crumbled Feta cheese

Steps:

  • Trim fat from meat. (YUCK!). Cut into pieces. In cooker, stir together meat, beans, undrained tomatoes, garlic and oregano.
  • Cover and cook on low heat for 8 - 10 hours or on high heat for 4 - 5 hours.
  • Stir in artichoke hearts and spinach. To serve, spoon over hot orzo in deep bowls and sprinkle crumbled feta over. the top.
