Great Grandmother's Baked Rice Pudding image

For my entire childhood I had no idea that rice pudding could be made creamy in a saucepan. This is the recipe I grew up with.

Number Of Ingredients 8

2 c cooked rice
3 c milk
1 1/2 tsp vanilla extract
1/4 tsp salt
1/2 c sugar
3 eggs, beaten
1/2 c raisins, optional
cinnamon, optiona

Steps:

  • 1. Cook rice in 3 qt. saucepan as you normally would. (Bring rice to boil then reduce heat and simmer 30 minutes)
  • 2. Combine cooked rice with all other ingredients except cinnamon. In a 10X6X2 baking dish which has been greased with butter (or margarine).
  • 3. Bake pudding in 325 degree oven for 1 hour or until set. Sprinkle with cinnamon on the top, if desired. Serves 10.
