Great Crustless Crab Quiche image

Had leftover Dungeness crab leftover after dinner (how can that happen?) and wanted to use it for something this morning. After not finding exactly what I was looking for, I came up with this recipe. My husband was sceptical but loved it! The prep time is assuming you have already cleaned your crab. I had not, so took a lot longer. I made this in a large muffin pan. A 9" pie plate should work fine. Immitation krab should work. I think shrimp or scallops would be good as well. This is the first recipe I have posted. Please be gentle. :) Enjoy!

Number Of Ingredients 7

3 large eggs
1 cup swiss cheese, grated
1 cup evaporated milk
1 cup fresh crab
1/2 teaspoon Old Bay Seasoning (more to taste)
salt and pepper
1 pinch dill, on top each quiche

Steps:

  • Preheat oven to 350*.
  • In medium bowl, mix eggs, cheese, milk and crab. Add seasonings. Spray a large muffin pan with oil. Pour egg mixture into the pan. Top each quiche with a pinch of dill. Bake for 35 minutes.
