A true Southern treat . My family from the rural Nashville ,Tn.area all learned how to make them from their Grannys.Wouldn't be a family reunion with out them.

Steps:
- 1. Put apples and water in a large pot ;bring to a boil, Reduce heat and cook uncovered until mixture thickens . Stir in sugar and cinnamon . Refrigerate.
- 2. Pastry for the pies... 4 cups self- rising flour...1 cup butter softened ...3/4 cup water ... Combine all ingredients and refrigerate overnight.
- 3. Roll pastry onto a floured surface to 1/4 inch thickness . Cut into 4 inch size circles. I use a saucer or a fruit dish as my pattern to cut around . Place about 1 to 2 tablespoons of apple mixture on one half of each circle . Fold in half. Press edges together with a fork dipped in flour. Heat 2 inches oil in a large skillet .heat to about 360 . Cook the pies in oil until golden brown turning once. Drain on paper towel . Sprinkle with sugar and cinamon
