A true Southern treat . My family from the rural Nashville ,Tn.area all learned how to make them from their Grannys.Wouldn't be a family reunion with out them.

Number Of Ingredients 4

1 pkg Dried Apples (or about 1/2 pound)
1 qt water
3/4 c Sugar
1 tsp Cinnamon

Steps:

  • 1. Put apples and water in a large pot ;bring to a boil, Reduce heat and cook uncovered until mixture thickens . Stir in sugar and cinnamon . Refrigerate.
  • 2. Pastry for the pies... 4 cups self- rising flour...1 cup butter softened ...3/4 cup water ... Combine all ingredients and refrigerate overnight.
  • 3. Roll pastry onto a floured surface to 1/4 inch thickness . Cut into 4 inch size circles. I use a saucer or a fruit dish as my pattern to cut around . Place about 1 to 2 tablespoons of apple mixture on one half of each circle . Fold in half. Press edges together with a fork dipped in flour. Heat 2 inches oil in a large skillet .heat to about 360 . Cook the pies in oil until golden brown turning once. Drain on paper towel . Sprinkle with sugar and cinamon

EASY FRIED PIES



Easy Fried Pies image

Number Of Ingredients 7

6-7 ounces dried fruit (I used peaches, can use apples, apricots, or other dried fruit)
1 cup sugar
2 cups water
1/4 cup butter or margarine
1 T lemon juice (optional, but I use it)
1/2 tsp cinnamon (optional, but I use it - if using apples, I add 1/4 tsp Allspice too)
10 - 15 flaky layers biscuits

Steps:

  • Place dried fruit in a pot and add water. Bring to a boil and reduce heat to simmer until fruit is tender. Add other ingredients and mash together with a potato masher or fork. Set aside while dough is prepared.
  • Roll each biscuit out on a floured surface into a five or six inch circle. Place two tablespoons of filling in each. Wet the edges and fold over, crimping with a fork.
  • Cook in oil which has been heated on medium heat, until browned on both sides, turning as needed. Remove to paper towel lined plate.

6 cups all-purpose flour
4 tablespoons granulated sugar
1/2 teaspoon salt
1 cup shortening, plus more for frying
2 eggs, beaten
2 cups buttermilk, more if needed
Apple pie filling, canned
Cherry pie filling, canned
Powdered sugar, for sprinkling

Steps:

  • To make the pastry, mix together the flour, granulated sugar and salt. Cut in 1 cup of the shortening until the mixture resembles coarse crumbs. Add 1 of the eggs and the buttermilk and stir until it just comes together. Add a little more buttermilk if needed. Form it into a ball and refrigerate for at least an hour.
  • To make the pies, roll the pastry out into a large square. Trim the edges to make a rectangle. Cut into 8 to 10 long rectangles, using a butter knife.
  • Spoon a tablespoon or so of filling into the top half of one of the rectangles.
  • Use the remaining beaten eggs to seal the edges by folding the bottom half of the rectangle over the top. Then crimp the edges shut with a fork. Repeat with the other pies, filling half with apple pie filling and half with cherry pie filling.
  • Heat shortening in a medium, deep saucepan over medium-high heat to 350 degrees F. Fry the pies until golden brown, 2 to 3 minutes per side. Remove and immediately drain on paper towels.
  • Sprinkle with powdered sugar and serve.

2 cups all-purpose flour
½ cup shortening, chilled
1 teaspoon salt
½ cup cold water
2 apples
¼ cup white sugar, or to taste
⅛ teaspoon ground cinnamon, or to taste
oil for frying

Steps:

  • Sift flour and salt together. Cut in the shortening with a pastry blender until the mixture resembles coarse crumbs. Add cold water 1 tablespoon at a time and mix with fork. When the flour mixture is moistened, gather it into a ball, wrap it in plastic, and refrigerate for 30 minutes.
  • Peel and dice the apples and place them in a saucepan. Combine the sugar and cinnamon; pour over the apples and toss to coat. Cook, covered, in a saucepan on low heat. Cook until soft, then mash with fork to form a thick applesauce. Allow to cool.
  • Transfer the dough to a lightly floured work surface. Roll the dough out to 1/8 inch thick and cut rounds with a large cookie cutter (4 inches in diameter).
  • In each round, place 1 heaping tablespoon fruit. Moisten edges with cold water, fold in half, and press edge with a fork to seal. Repeat with the remaining pastry and filling.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Fry the pies, a few at a time, 2 to 3 minutes on each side; cook until the crust is golden brown. Drain on paper towels.

This pie crust is one of the simplest, tastiest ones you'll ever try.

2 cups all-purpose flour
1 teaspoon salt
½ cup vegetable oil
3 fluid ounces cold milk

Steps:

  • Sift flour and salt into a bowl. Pour vegetable oil into a 1-cup measure and fill the measure with milk up to the 7-ounce mark. Whisk oil and milk together and pour immediately into the bowl with flour. Mix the crust together with a fork just until it holds together. Do not knead.
  • Divide crust in half, form into balls, and roll each half out between sheets of waxed paper. Peel waxed paper from crusts to fit into pie plate.
