Grandma's Stuffed Peppers image

This recipe has been made by grandma, passed down to my mother, and fed to all of us, including my children ... It's their favorite!

½ cup uncooked white rice
1 pound ground beef chuck
½ pound ground pork
1 small chopped onion
1 egg
salt and ground black pepper to taste
6 green bell peppers, tops and seeds removed
1 (46 fluid ounce) can tomato juice (such as Del Monte®)
2 cubes beef bouillon

Steps:

  • Place rice in a small bowl and add warm water to cover. Soak for 15 minutes. Drain and transfer rice to a large bowl.
  • Add ground beef, ground pork, onion, egg salt, and pepper to the rice. Mix by hand until all ingredients are well combined. Stuff beef mixture into bell peppers and place in a Dutch oven, with stuffing facing up. Pour tomato juice over the top and add bouillon cubes. Bring to a boil over medium-high heat, about 5 minutes. Reduce heat to medium-low, cover, and cook until peppers are tender and meat filling is cooked through, about 1 1/2 hours.
