GRANDMA LANDAU'S COOKIES image

Yield 3 dozen

Number Of Ingredients 10

1 cup unsalted butter
1 3/4 cups all purpose flour
1/2 tsp baking powder
1/2 tsp salt
1 cup (2 sticks or 8 oz) unsalted butter
1 cup dark brown sugar, packed
1 egg, separated
1 tsp vanilla extract
1 1/2 cups chopped walnuts
1-2 tablespoons sugar

Steps:

  • Preheat oven to 350 degrees. (See note) Combine the flour, baking powder and salt and set aside. Cream butter and brown sugar 2-3 minutes until fluffy. Add egg yolk. Combine. Add vanilla extract. Gradually add dry ingredients to combine. Add 1 cup of the walnuts. Beat the egg white and white sugar to make a meringue. Roll dough into walnut-sized balls. Make a depression in the middle with your thumb. Add a dab of the meringue and reserved chopped nuts to top of each cookie. Bake 15-20 minutes until set and golden brown.
