Grandma Gusky's Chewy Oatmeal Cookies (Gluten Free) image

This recipe was given to me by my mother-in-law. It was her mother's recipe. I converted it to be gluten free. If you don't need it to be gluten free, simply substitute the rice flour, starch and protein powder for 1 1/4 cups unbleached flour. Also, omit the xanthan gum.

2/3 cup rice flour
1/3 cup cornstarch or 1/3 cup tapioca starch
2 tablespoons pea protein powder or 2 tablespoons whey protein powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1 tablespoon cinnamon
1 teaspoon salt
1 teaspoon xanthan gum
3/4 cup butter
1/2 cup white sugar
1 1/2 cups brown sugar (firmly packed)
3 eggs
1 1/2 teaspoons vanilla
2 1/2 cups quick oats (oatmeal)
1 cup walnuts (finely chopped)
1 cup shredded coconut
1/2 cup raisins

Steps:

  • Preheat oven to 370°F.
  • Sift or stir together flour, starch, baking powder, baking soda, cinnamon, salt, and xanthan gum. Set aside.
  • In a large bowl, cream butter and add sugars. Mix well.
  • Add eggs and vanilla, then blend in dry ingredients.
  • Add oatmeal, coconut, raisins, and finely chopped nuts. Mix.
  • Drop by rounded teaspoonfuls on a lightly greased cookie sheet.
  • Bake at 370 F for 8 to 13 minutes, until light brown, the lesser time being more chewy, the greater time making them crunchier.
