Grandma Evans' Applesauce Spice Cake image

Number Of Ingredients 10

2/3 cup margarine or butter
1 1/4 cups brown sugar
3 eggs
1 1/2 cups apple sauce
1 teaspoons baking soda
2 1/2 cups flour
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1 pinch nutmeg

Steps:

  • In a large bowl, stir in 1 tsp. of baking soda to applesauce and let it fizz up a bit. (1 minute)
  • Then add in the eggs, margarine and brown sugar. Blend together.
  • Add the flour, baking powder, and spices to the mix and blend in.
  • (The recipe says that if it seems a little dry, add 1/2 cup of milk. I have never needed to do this, but if it looks thicker than the usual texture of a cake batter, you can add a little, or perhaps a little more applesauce.)
  • put into a greased 8x8 cake pan and bake at 350 degrees - for about 45 minutes, or until a fork comes out clean when testing the center of the cake.
  • This cake is lovely with a simple lemon icing drizzled on it - some icing sugar, with a bit of lemon juice mixed to give it the consistency you want,....
