Steps:
- 1. Heat oven to 350 degrees F. Grease and flour 2 loaf pans or tube pan. Set aside.
- 2. In a large bowl, combine the sugar, oil, eggs, vanilla and zucchini. In a separate bowl, combine the flour, salt, baking soda, baking powder and cinnamon. Add dry ingredients to wet and mix well.
- 3. Pour batter into prepared loaf pans and bake for 50-60 minutes or until toothpick inserted near middle comes out clean (but it may look a little wet....).
- 4. Cool in pan for 10 minutes then transfer to a wire rack to cool completely.
