Gorgonzola Goat Cheese Minis image

Pumpernickle goes well with strong flavors (I think), so the "stinky cheeses" like gorgonzola and goat, taste great against the dark flavor of pumpernickle. I used roasted red pepper hummus for this one and it tasted great...

Number Of Ingredients 12

6 slice(s) cocktail pumpernickle bread
3 slice(s) smoked ham
3 slice(s) tomato
3 slice(s) cucumber
3 tablespoon(s) hummus
4 - fresh basil leaves
- handful goat cheese crumbles
- handful gorgonzola crumbles
- handful red onion, sliced thin
- handful fresh chopped dill
- handful fresh chopped chives
- pinch of salt

Steps:

  • Top 3 of the bread slices with the crumbled cheeses. Toast ALL slices in convection oven until bread is crispy and cheese is soft and warm.
  • Roll basil up and cut into bits that will unroll into mini strips (basil chiffonade).
  • Assemble: on top of cheesy slices, layer the basil, then the ham, tomato, cucumber, pinch of salt, red onion, chives and dill.
  • Spread hummus on empty slices and top your lovely mini sandwiches. Enjoy.
