Good Luck Hoppin' John image

This is an easy way to make Hoppin' John for the new year. It's made with a medley of red and green peppers with onion. The veggies simmer in the slow cooker with broth and black-eyed peas. As it cooks, the flavors meld together creating a flavorful and delicious meal. Serve over a bed of fluffy white rice for a down-home delicious (and lucky) New Year's Day meal. We highly recommend adding a handful of bacon (is bacon ever optional?). It's amazing!

1 1/2 tablespoon(s) olive oil
1 - medium onion, diced
1/2 - red pepper, diced
1/2 - green pepper, diced
3 - cloves garlic, minced
1 1/2 teaspoon(s) salt
1 teaspoon(s) pepper
1 tablespoon(s) dried parsley
1 - handful crumbled bacon, optional
1 teaspoon(s) crushed red pepper (for heat)
2 can(s) black-eyed peas, 15 oz. each
4 cup(s) cooked rice

Steps:

  • Heat the olive oil.
  • Sauté the onion, peppers, and garlic until translucent, about 4-5 min.
  • Stir in the black-eyed peas, broth, salt, pepper, and parsley. Add the crumbled bacon if using.
  • Pour all into a slow cooker and cook on low for 3-4 hours.
  • Serve over the cooked rice. Enjoy. My husband likes to garnish the top of his with freshly chopped onions and more parsley.
