Glazed Roasted Brussels Sprouts with Bacon image

1/2 c apricot preserves
3 Tbsp olive oil
2 Tbsp balsamic vinegar, white
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp pepper
3 pkg brussels sprouts, trinmmed halved lengthwise
1 medium red onion, chopped
2 slice bacon, chopped

Steps:

  • 1. Preheat oven to 425*. In large bowl, whisk together apricot preserves, oil, vinegar, garlic powder, salt & pepper. Add Brussels sprouts, onion & bacon; toss until evenly coated.
  • 2. Spread vegetable mixture on ungreased baking sheet. Roast until Brussels sprouts are tender and lightly browned, about 20 minutes.
