Glazed Meatloaf image

This is my adaptation of my daddy's meatloaf. It is moist and flavorful and pure comfort food. I serve with mashed potatoes and a salad or vegetable.

2 lb lean ground beef
1 lb ground pork
2/3 c cracker crumbs (club or ritz)
2/3 c italian bread crumbs
1 to 1 1/2 c half and half (light cream)
2 eggs
1 c carrots, grated
2 tsp garlic powder
1 onion, grated
1 medium bell pepper, diced
2 Tbsp worcestershire sauce
2 Tbsp steak sauce or hp sauce
1 1/2 Tbsp fresh chopped parsley
1 tsp celery salt
salt and pepper
GLAZE
1 c ketchup
3 Tbsp dijon mustard
2 Tbsp bbq sauce
2 Tbsp honey
1 Tbsp minced onion
2 tsp garlic powder
1 Tbsp worcestershire sauce
1 Tbsp steak sauce or hp sauce

Steps:

  • 1. Preheat oven to 375 degrees. In a large bowl, mix cracker crumbs and bread crumbs together and pour 1 cup of half and half over the mix. Let set for 5-10 minutes to soak.
  • 2. Add all remaining loaf ingredients to bowl and mix until well combined and uniform. Add additional half & half as needed until the consistency is very wet but still able to form a loaf.
  • 3. Divide the mixture in half and place each in a 9 x 5 loaf pan. Form into even loaves.
  • 4. Mix all glaze ingredients and pour half over each loaf. Bake for 45-60 minutes until juice runs clear. Let sit for 10 minutes before slicing.
