I got this recipe from a box of gingerbread cookies.

8 - gingerbread cookies
4 scoop(s) vanilla ice cream, softened
OPTIONAL
- colorful candy sprinkles
- mini chocolate chips

Steps:

  • Unwrap gingerbread cookies.
  • Spread ice cream on backs of the cookies.
  • Sandwich together.
  • Decorate with candy sprinkles or mini chocolate chips.
  • Place ice cream sandwiches in covered container and keep frozen until ready to eat.
