This is a tasty, fun, easy and inexpensive gift to give... We let the kids help make this and they give it as gifts to teachers and family. We also do canning, and put together baskets of "goodies" and take them to elderly and disabled people to brighten their holidays!

Steps:
- 1. In a large bowl, stir all ingredients together until well blended. Store in a airtight container or a resealable plastic bag.
- 2. Yields about 10 cups pancake mix, enough for 5 batches of pancakes. Give with the following recipe for pancakes.
- 3. Almond Pancakes: 2 1/2 cups pancake mix 1 1/4 cups water 1 egg 2 tablespoons vegetable oil In a medium bowl, combine all ingredients, and stir just until moistened. Heat a greased griddle over medium heat. For each pancake, pour about 1/4 cup batter onto griddle and cook until top of pancake is full of bubbles and underside is golden brown. Turn with a spatula and cook until remaining side is golden brown. Re-grease griddle as necessary. Serve with butter and syrup. Yields about 1 dozen 5-inch pancakes
- 4. I make labels for the jars or packages, or I make a recipe card with a hole punched in it to hang on the ribbon that I attach to the jar. I also use a plate or other round item to trace circles 3 - 4 inches bigger around than the jar lid. I use a rubber band to attach the cloth circle to cover the lid/ring on the jar. Then I tie a pretty ribbon on to cover the rubber band and to attach the recipe card. Then tie a pretty bow.
