SMOKY SPLIT PEA SOUP image

Number Of Ingredients 9

1# dry split green peas, rinsed
4 medium carrots, cut into 1/2" pieces
2 medium parsnips, cut into 1/2" pieces
2 stalks celery, cut into 1/2" pieces
2 cloves garlic, finely chopped
1 large onion, chopped
1/2 t. dried thyme
2 ham hocks (about 1 1/2# total)
salt and pepper

Steps:

  • In a 5-6 qt. slow cooker, combine peas, carrots, parsnips, celery, garlic, onion, thyme and 6 c. water. Add the ham hocks and cook, covered until the meat is tender and easily pulls apart, on low for 7-8 hours or on high for 4-5 hours. Remove hocks and remove meat. Put back in soup, along with salt and pepper.
