German Reuben Casserole image

This casserole recipe is different than all the others I've seen, as this doesn't use bread in it. This is a family favorite. Hope you enjoy it, as well. :)

Number Of Ingredients 9

6 medium potatoes, approximately 1 1/2 pounds
2 (16 ounce) cans sauerkraut, drained
1 lb smoked sausage, thinly sliced
1 cup thousand island dressing
4 tablespoons parsley flakes
1 teaspoon caraway seed
1/8 teaspoon black pepper
1 1/2 cups swiss cheese, shredded
1 green pepper, cut into strips

Steps:

  • Peel, dice, and cook potatoes.
  • In a large bowl, combine all ingredients except for the Swiss cheese and green pepper.
  • Gently stir to combine.
  • Spoon into greased 9x13-inch oven-proof glass baking dish. Cover and bake at 350 degrees for 25 to 30 minutes.
  • Uncover, and sprinkle with green pepper strips and Swiss cheese.
  • Bake, uncovered, for 5-10 minutes more.
