German Potato Salad image

A traditional side dish from Southern Germany.

3 lb red potatoes, peeled
3/4 c onions, chopped
8 slice bacon, cut in 1" pieces
2 Tbsp flour
1/4 tsp celery seeds
1 1/2 tsp salt
1/4 tsp pepper
4 Tbsp sugar
1 c water
1/2 c cider vinegar
1/4 c fresh parsley, chopped

Steps:

  • 1. Dice the potatoes and cook in lightly salted water until tender. Drain and keep warm. You can also boil the whole potatoes until cooked through, cool, and cut into 1/4 inch slices. This is the more traditional way.
  • 2. Meanwhile, fry bacon until crisp. Remove bacon and discard all but 3 tablespoons of the drippings. Add the onions and cook until tender, about 5 minutes.
  • 3. Combine the dry ingredients. Add them to the onions and stir to blend. Add water and vinegar. Bring to a boil until it thickens up.
  • 4. Pour over the hot cooked potatoes. Add bacon and parsley. Toss everything gently to coat.
  • 5. The salad may be kept warm in a 200F oven, or in a crock pot set to low.
